For this year's annual collaboration with the James Beard House Dinner, we worked with Chef Oscar Toro from Jue Lan Club and Chef Chen Zhi Neng from Hakkasan to produce a spirited dinner around the theme of culinary collisions. Two globetrotting chefs whose culinary accolades defied categorization and came together to create a most innovative dinner where influences from Asia, France, Cuba, Spain and beyond re-define “fusion” cuisine in today’s global dining culture. Cocktails and hors d’oeuvres were followed by a seated 5-course collaboration menu which showcased both chefs' strong Asian culinary pedigree through dishes that were infused with Asian spirits like rice wines, lemongrass and black peppercorn-infused gin and fermented liquors currently making their splash outside of Asia.
